Rubs and Sauces

This post lists some of the rubs and sauces I use at home and in competitions.

Rubs


All Purpose Rub
This is the rub I used in the Cure of Ars’ Holy Smokes BBQ competition last year when I placed tenth in brisket. It works well on everything, not just beef. I think it tastes like traditional Kansas City barbecue. This is the rub I give out at parties when people ask for a competition worthy rub.


Cajun Rub
I use this rub when I grill chicken at home. It’s one of the first rubs I created on my own. I have tinkered with a lot of rubs over the last few years but I always come back to this one.

  • 2 Tablespoons Paprika
  • 1 Tablespoon White Sugar
  • 1 Tablespoon Act II Butter Salt
  • 1 Tablespoon Black Pepper
  • 1 Tablespoon Ground Cumin
  • 1 Tablespoon Mustard Powder
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Onion Powder
  • 1 Tablespoon Chili Powder
  • 1 Tablespoon Coriander
  • 1 Tablespoon Italian Seasoning
  • 1 teaspoon Cayenne
  • 1 teaspoon Cinnamon


Bacon Salt Rub
I made this rub up after a friend of mine introduced me to Bacon Salt. I used it on a brisket my Dad and I smoked together.

  • 3 Tablespoons Black Pepper
  • 2 Tablespoons Bacon Salt
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Brown Sugar
  • 1 teaspoon Onion Powder
  • 1 teaspoon Chili Powder


Table Rub

This a basic, straight forward rub that I use for everything from pizza to bbq. I use it in most of the sauces I create and it’s replaced the salt and pepper shakers on my table. Good stuff!

  • 4 Tablespoons Black Pepper
  • 2 Tablespoons Jane’s Krazy Mixed up Salt
  • 1 Tablespoon Cayenne Powder
  • 1 teaspoon Chili Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Mustard Powder
  • 1 teaspoon Brown Sugar
  • 1 teaspoon Ground Cumin


Sauces


Kansas City Style Sauce
This is a tomato based Kansas City style sauce with some zip; aimed to please the sweet toothed KCBS competition judges. Some people might like a hotter sauce than this one, so you might add more hot sauce or cayenne to increase the heat to your liking.

  • 8oz Can Tomato Sauce
  • 1 Cup Ketchup
  • 1/2 Cup Brown Sugar
  • 1/4 Cup Beer
  • 1/4 Cup Molasses
  • 2 Tablespoons Red Wine
  • 2 Tablespoons Worcestershire Sauce
  • 2 Tablespoons Yellow Mustard
  • 2 Tablespoons Hot Sauce
  • 1 Tablespoon Lemon Juice
  • 1 Tablespoon Bacon Bits
  • 1 Tablespoon Butter
  • 1 Tablespoon Table Rub
  • 1 teaspoon Liquid Smoke


Mustard Sauce
I personally like a tangier sauce on pork and chicken. This is a quick and easy sauce to make. I just blend the ingredients and use it immediately.

  • 1 Cup Yellow Mustard
  • 1/4 Cup Beer
  • 1/4 Cup Honey
  • 2 Tablespoons Beaver Sweet Hot Mustard
  • 1 Tablespoon Hot Sauce
  • 1 Tablespoon Table Rub


White Sauce
Big Bob Gibson used this style of sauce on poultry. This is my simple take on his sauce, which is also surprisingly good on sandwiches!
